A Fascinating Moist Cake with a Strong and Intense Coffee flavour frozen with creamy mocha frosting.

Mocha Coffee Cake outsets with an exquisite batter mixed with cinnamon, cardamom and strong mishmash coffee. It is swirled with dark chocolate topped with delicious mocha frosting which makes it really irresistible.
I mean, this is the perfect combination of Coffee flavour with Mocha Frosting.

Ingredients of Coffee Cake With Mocha Frostings:

 For the Cake:
2 Cups all-purpose flour
2 Cups fine granulated sugar
¼ teaspoon salt
1 Cup softened – unsalted butter
3 tablespoon coffee mixture (4tablespoon instant coffee + 1cup boiling water)
1/2 Cup buttermilk
2 large eggs
1 teaspoon baking soda
2 teaspoon vanilla extract.

For Mocha Frosting:
½ + ¾ cup softened or unsalted butter
3 ¾ cup icing sugar
2 tablespoon instant coffee
3 tablespoon dark cocoa powder
4 tablespoon heavy cream
¼ teaspoon salt

How to Prepare Coffee Cake with Mocha Frosting:

For the Cake:

  1. Preheat oven to 350˚ or 170˚C.
  2. Grease and flour one or two big round baking pans.
  3. Mix sugar, flour, ¼ teaspoon salt and baking soda in a large bowl. Set aside.
  4. Heat butter in a pot on medium-high speed.
  5. In the meantime, while it’s melting, add 3 tablespoons instant coffee to 1 cup boiling water. Again set aside.
  6. Once the butter has melted, add coffee mixture into the same butter pot. Let it boil for some 10-15 seconds and then turn off the heat and set aside for just a minute.
  7. Add buttermilk, vanilla extract and eggs in a separate bowl. Mix it well.
  8. Pour flour mixture into the butter/coffee mixture. Stir it gently. Then cool down the heat before adding the egg mixture.
  9. Mix in the egg mixture and stir it gently until well mixed. Then pour the whole mixture into the pans. Bake for 20-25 minutes (for big pan heat it to 30-35 minutes).
  10. Allow it to cool completely.

For Mocha Frosting:
Mix all icing ingredients and then ice the Cake. Freeze it for an hour before serving.
